Whatever happens, I always have a couple of homemade spreads in the fridge. To pimp a sandwich, wrap or as base for a nice salad or pasta. Or use on bruschetta’s with a drinks. They are easy to prepare and because we use vegetables and nice olive oil, they are a healthy way to make your sandwich, meal or snack extra special. Depending on the freshness of your ingredients, you can easily keep them in the fridge for a week or so.
You can vary with your own favourite vegetables, herbs and spices. I just love fresh herbs and especially dragon. The anise flavour goes well with all sorts of other ingredients like; salad, pasta, fish, chicken or meat.
To make the preparation easier a blender of food processor would be handy. I like some structure in the spreads, so I don’t blend to long.
Put all ingredients into the blender and mix for just 30 seconds to a minute depending on the structure you like. Use your own favourite extra virgin oil!!
Beetroot with mint
- 250 gr cooked beetroot
- 8 gr mint
- 1 big tablespoon of fat free yoghurt
- 2 ½ tablespoon olive oil
- 1 teaspoon of ras el hanout
- salt and peper
Spicy hummus
- 200 gr soaked chickpeas
- 1 clove of garlic
- juice of ½ lemon
- 2½ tablespoon of olive oil
- sambal (choose your own, depending on the heat you can have)
- salt and peper
- Instead of sambal you can also us some red pepper
Red pepper spread
- 100 gr red pepper
- 50 gr of barrel aged feta
- 1 teaspoon of smoked paprika powder
- 3 table spoons of olive oil
- 1 tablespoon fresh cut parsley
- salt and peper
Fresh herbs pesto
- 50 gr roasted pine nuts
- 40 gr of fresh herbs (I just dragon, parsley and basil)
- 30 gr of grated Parmesan cheese
- 1 dl of olive oil
- salt en pepper
